Done
in a crisp, refreshing style, far from the over the top heavily oaked,
flabby Chards often seen in California. It shows green apple, citrus and
nutmeg flavors, with plenty of acidity to work well with food. Its
delicious with roasted game hen served with a shallot rosemary gravy.
